Canon
Mordred is from the novelized version of Fate/Apocrypha, an alternate universe sequel to Fate/Stay Night. In there, Masters and Servants are split into two teams, with seven to each team. Mordred is summoned as the Saber of the red team. Her true identity is the "son" of King Arthur and the "traitor" who would cause the destruction of Camelot.
Personality
Mordred is essentially Saber of Fate/Stay Night, but with all her traits blown up to 11. Arturia can control her emotions, but Mordred cannot. She also has issues where her body and her father are concerned. She puts on a facade of self confidence and seems to be brimming with confidence as long as her body issues are brought up. As a knight, she was said to be a woman of honor and the flower of knighthood. To some extent, she holds this chivalry in the modern day. However, she was also embittered by her experiences with Arturia. As a result, her interpretation of chivalry can be called rather loose. While she still protects innocents and shows courtesy to those she believes to be deserving of it, her speech and attitude are rough and she condescends toward a majority of people.
As a homunculus, Mordred grew up quickly and was destined to have a short life. Thus, she had an unconscious jealousy of normal people. Like all other insecurities, this was hidden behind her pride at being King Arthur's child (a perfect successor above common men) and in the past, her picture-perfect displays of chivalry. Because of her strange development, she at times shows a childlike curiosity and obsession.
Her wish is not to become king, but to prove her right to be king by drawing Caliburn from the stone. Again, this links to her desire to be accepted, by her father and by the people of Britain.
Gender
As a perfect genetic clone of Arturia, Mordred's physical sex is female. If raised in a proper environment and allowed to decide for herself, her chosen gender role would also be female. Her issues stem less from the desire to identity as a man or gain a man's genitals than to gain what said genitals would symbolize. That she is her father's child, that she can be a perfect heir for the throne of Britain, that she would be a strong and honorable knight. As seen in the newly released Apocrypha material, her favorite causal clothing is that of a biker girl. Left to her own devices, she does have some habits that people would consider feminine. Though she hates being referred to as a woman, she acknowledges herself as female. Thus, despite all her issues, Mordred is referred to with feminine pronouns.
